Mediterranean Chicken
RECIPE
This recipe has been passed onto us by our neighbour Di and I believe it was passed onto her by another one of our neighbours… may as well be called Freshwater Creek Chicken.
INGREDIENTS
8 Chicken fillets - skin removed
4 cloves of garlic
3tsp oregano
salt & pepper
¾ cup olive oil
1 + ½ cups pitted prunes quartered
¾ cup dried apricots
¾ cup green olives
½ cup capers
4 bay leaves
On top of chicken
¾ cup brown sugar
1 + ½ cups white wine
TO SERVE
Buttered couscous & green salad
METHOD
Prepare 24 hours in advance
Spread chicken fillets out in baking dish
Combine other ingredients (except brown sugar & wine) and spread over chicken.
Cover and refrigerate overnight
Preheat oven to 180 C
Sprinkle chicken with brown sugar and wine
Bake 30-40 mins or until cooked
Serve on a bed of couscous with a fresh green salad
