Breakfast Bruschetta
RECIPE
I was strolling through the supermarket and was stopped in my tracks by these beautiful looking tomatoes and thought why not whip up a simple breakfast bruschetta? This is a really quick, simple and satisfying meal.
METHOD
Shred the kale and fry up in a pan.
Cook your eggs however you wish - we soft-poached ours.
In a bowl mix chopped tomatoes, diced red onion, drizzle with olive oil and balsamic vinegar. Season with salt and pepper.
On toast stack kale, tomato mix, eggs, goats cheese and basil.
Enjoy with a strong cup of coffee.
